Cold Tomato Soup


Tomatoes are rich in lycopene which is a class of carotenoids. It is a very strong antioxidant which can help the body to get rid of free radicals and protect the brain from damaging by this oxidant. But there is one thing to notice, lycopene belongs to fat-soluble and it is insoluble in water. That is why you should add some oil when cooking tomato so that the lycopene can be absorbed by the body.


  • 8 tomatoes
  • 2 celeries(chopped to mince)
  • 1 teaspoon orange skin
  • 2 teaspoons sugar
  • a pinch of salt
  • pepper, to taste


  1. Put the tomatoes into boiling water for 10 seconds. Take out and peel.
  2. Cut the tomatoes into halves, use a steel sieve to crush into mince. Mix with celery and orange skin. Seasons with sugar, salt and pepper.
  3. No cooking is needed. Put in the refrigerator and make cold tomato soup.
